What could be better to refuel and refresh you on a warm summer day than a crisp, yummy, nutritious salad.

I make salads quite often as a side dish, but Linda's challenge got me noticing how delicious these everyday recipes really are. While sometimes as a celiac I wanna say enough salads, since it seems to be the recurring sole item on menus that are supposed to be gluten free.
