Cucumber and Herb Yogurt Salad Recipe

This is kind of a take on your traditional yogurt dip or tzatziki dip. But, since everyone makes theirs different, I thought I'd share this version made with fresh from the garden herbs and cucumbers.

Ingredients
1 cup of plain yogurt (I used goat yogurt because it's my favorite)
1 cucumber sliced thinly and chopped
3 tbs chopped green onions and/or chives
2 tbs fresh chopped basil
1-2 cloves of garlic minced
1 tsp fresh dill chopped
1 tbs lemon juice
salt & pepper to taste

First, put the yogurt in a very fine strainer or over cheesecloth and let sit so the excess liquid drains out, leaving a thick style yogurt.

Then place the cucumber in a bowl and sprinkle with salt. Let that sit for at least 10 minutes. (Meanwhile you can chop your herbs). Then drain out the excess water.

Combine all of the ingredients in a bowl, cover and refrigerate for at least an hour to let the flavors infuse.

This is a great recipe for a hot day or to accompany a spicy dish. It is also very versatile - it can be served as a dip, atop a bed of lettuce or spinach, as a topping, or on its own.
