I love carrots - especially when roasted to bring out their sweet, warming flavor.

Maple Roasted Carrots Recipe - Dairy Free, Gluten Free Version
Ingredients
16 or so whole carrots, peeled and cut in diagonal cup strips
2 tbs coconut oil
4 tbs maple syrup
1 tsp cinnamon

Preheat oven to 375
Toss the carrots in the other ingredients and lay in a single layer on a baking sheet.
Bake covered for about 30 minutes, then uncover and bake for about 15 minutes or until tender.
