Homemade Almond Milk Recipe

I thought I would re-post this recipe for The Gluten Free Homemaker's Gluten Free Wednesdays Carnival as this month is featuring beverages. I also have read that Linda is dairy free, like Brian, so this could come quite in handy! Happy Birthday Linda!

I can't believe how easy it is to make almond milk! And it is so nice to enjoy it without all the preservatives and additives some brands have. While, homemade almond milk is not fortified with Vitamin D like many milks are, it is still extremely nutritious and is a great replacement for dairy in baking or making smoothies.

Homemade Almond Milk Recipe
Ingredients
Almonds
Purified water
(about a 1:3 almond to water ratio, but play around to your preferred consistency)

Soak almonds overnight. If soaking for more than 6-8 hours, I recommend switching out the soaking water. When ready, rinse and blanch lightly by pouring boiled water over them. This will help the skins to come off with ease. I recommend taking off the skins for nice, smooth, white-colored milk, but I have been lazy and left them on and it came out just fine.

Put almonds in the blender and cover with water. The amount of liquid is relative to how thick or thin you want the milk to come out, so feel free to change accordingly. Blend really well, starting on a low setting and moving up in speed. It should turn a frothy white color and the almonds should be really well ground. Strain into a large bowl or mason jar through a very fine strainer, preferably covered in cheesecloth or through a fine mesh bag (I use paint strainer bags). Press as much liquid out as possible, stirring around and pressing with a spoon. Set pulp aside – great for baking! If your strainer isn’t the thinnest around, you may want to blend and strain again.
Store in the fridge in a sealed container for a couple days.

Variations:
Blend in unsweentened cocoa powder, maple syrup, honey, vanilla, strawberries, blueberries, dates, etc.
Sub all or some of the water with coconut water for extra electrolytes, or a little kombucha or other probiotic drink to boost your benefits.
