All that is Almonds: Almond Butter, Almond Milk, Almond Cheese, Almond Flour…

With cutting out or cutting back on peanuts, cow's milk, and as always for me - glutenous grains, we've been experimenting a lot with almonds. Here is a sampling of homemade almond recipes I've tried lately. If you are really into almonds you might like this blog about gluten free cooking with almond flour. I read it regularly and it is full of yummy recipes. 

In the meantime, here are a few of my own:

If you hadn’t noticed, we were kinda obsessed with peanut butter. I would eat it at breakfast with a banana, at lunch with carrot sticks, with a spoon right out of the jar for snacks, and even chocolate flavored peanut butter for dessert (which occurred throughout the day for me). But, after reading that peanuts are difficult to digest and often have a toxic fungus that grows on them, we decided we should try not eating peanuts and see how we feel. Eliminating something so widespread in your diet could be traumatizing though. So, since we used to completely overdo the peanut, it seems only right to completely overdo its replacement – the almond.

Here is where almond butter comes in to save the day. It fits in all of these places perfectly. But at nearly 3 times the price as peanut butter,  I decided it was time to try to make our own homemade almond butter. It tastes even better than the store version and you don’t have to mess with that top layer of oil that rises up in jarred almond butter (this may be because we eat it so fast the oil doesn’t have time to separate). Here is the most amazingly simple recipe. All you need is a food processor and almonds!

In addition to avoiding peanuts, Brian is also avoiding dairy to see if it helps his tum tum. So no milk or cheese L Well, when life hands you spilled milk, make almond milk...or something like that?? Again, all you need is almonds and a blender!

On to the real good stuff….cheese! There are numerous methods for making homemade almond cheese. It really depends on what you are looking for. I have not yet made sliceable cheese, but I have made some good cheese spreads.

Of course you can just go buy this at a store, BUT this is way more fun right?
How to Make Almond Meal at Home
Ingredients
Almonds

There are two ways you can go about whipping up some great almond meal in a pinch. 
One, just grind almonds in food processer until fluffy, but before they turn to butter. 
OR, take the pulp from your almond milk and dehydrate in an oven on the lowest setting or in your dehydrator. Or just plug right into a recipe- there are many out there using almond pulp.

Almond meal is great in making power bars, cookies, brownies, muffins, etc.  I’ll be sharing some recipes that use it in the future.
