Homemade Almond Butter Recipe

So, just before buying my own peanut butter making machine, I googled how to make almond butter - and it's amazingly simple! Here's how:

Almonds (as many as you want!)

If you have pre-roasted almonds, put them in the food processor and blend for about 5 minutes. I know it will feel like it is taking forever, but keep processing! On the bright side, if you get impatient and stop early, you’ll have a nice fluffy almond meal/flour that you can use for baking. But patience pays off in the form of a deliciously creamy butter if you keep blending.  

I haven’t had almond butter (store bought or homemade) that is completely uniform and creamy - it will be slightly grittier than creamy peanut butter, more like the old fashioned peanut butter you get out of those big red machines like soft serve ice cream. Once it is at your desired consistency it is ready to be eaten, or you can store it in an air-tight container in the fridge for probably about a couple weeks – I wouldn’t know how long it stays fresh because ours lasts only a couple days due to overconsumption.

Note on Nuts: If you buy raw almonds you should roast them first for about 10 minutes or so at 350 degrees. I like to soak them first too. This supposedly releases the enzyme inhibitors that keep nuts from turning into a full plant, and keep you from easily digesting them. Put almonds in a bowl with cold purified water, enough to cover the nuts by about 2 inches. Soak overnight or for at least 4-6 hours. Rinse and drain. Then you can either roast them in a toaster oven at 150 degrees or dehydrate them.

Variations:
  • Use this method for nearly any type of nut or seed. 

  • If you like crunchy nut butter, you can pulse in a few chopped nuts at the end too.

  • If you like it creamier, add a little cold pressed oil.

  • Flavor your almond butter to match your craving. Try Cinnamon, Honey, Maple syrup, Unsweetened cocoa powder, Cayenne, Salt, Dates, Raisins, Vanilla or any combination of things!
