Zesty Yellow Squash Hummus - Swiss Army Knife of Dips

Squash Hummus

This is a recipe I got from the Healing Diets course I took (altered ever so slightly to my liking). This is a great alternative to making traditional hummus when you don't have time to cook chick peas and don't want to use the slimy salty ones from a can. This is also a great way to sneak in vegetables for a non-veggie lovin' crowd.

Zesty Yellow Squash Hummus Recipe 
Ingredients

4 medium yellow squashes cut in chunks
1 large lemon, peeled, chopped and de-seeded
3 cloves garlic
3/4 cup sesame seeds
1/2 cup cashews
Couple shakes of cayenne, cumin, and S&P
1 Tb olive oil (to garnish)
1 tsp paprika (to garnish)
A twig of mint (to garnish)

Briefly blend chopped squash and lemon in a high-speed blender or food processor until coarsely pureed. Add the remaining ingredients and blend until smooth and creamy. Season to taste, then transfer into a serving dish. Drizzle olive oil and sprinkle with paprika and garnish with mint or fresh herbs of your choice (I took a chance and used cilantro because it was the only herb I had on hand, and it turned out surprisingly good).

Try different spices for a little variety, like adding ingredients like extra roasted garlic, sun-dried tomatoes, kalamata olives, jalapeƱo peppers, etc for different flavors. If something cool works out for you, post it as a comment to share!

This recipe serves a lot - I would guess at least 8-10 - then again that depends on your serving size ;)

Because it doesn't have a super strong flavor you can use squash hummus in a variety of ways: 
Serve as a dip with veggies like carrot sticks, celery, cucumber slices, and radish slices.
Spread on gluten-free flaxseed crackers or strips of gf brown rice tortilla.
Spread hummus on lettuce wraps and top with sliced mushrooms, cucumber, onion, and tomato.
Use as a dip for veggie spring rolls.
Spread hummus on a gluten free brown rice tortilla and top with feta cheese and pine nuts and warm slightly in a toaster oven or microwave...mmm!
Use instead of mayonnaise on sandwiches or anything else.
Mix a dollop or two in with a green salad
