Gluten Free Dairy Free Chocolate Avocado Parfait Recipe

1 avocado
3 tbs unsweetened cocoa powder
3 tbs maple syrup
1 tbs peanut butter
2 kiwi sliced
4 strawberries sliced
2 cups gluten free granola (I used Trader Joe's Loaded Fruit & Nut Gluten Free Granola)
Fresh mint to garnish (optional)
1. Mash up the avocado so it is super smooth
2. Mix the cocoa powder in well
3. Stir in the maple syrup and peanut butter
4. Put the fruit slices in the bottoms of two bowls, top with a couple scoops of chocolate filling, top that with the granola and sprinkle with chopped mint
You won't need coffee to get you going after this natural sugary and chocolate breakfast! That's why we went for a chicory drink instead - which also has numerous digestive and cleansing benefits. As soon as I get settled into a home here, I plan to start selling chicory locally so other people can enjoy it's health benefits.
