Almond Butter Teff Cookie Bars Recipe

When I saw teff flour in the grocery store, I excitedly bought some to experiment with making some Ethiopian food - which I have no experience with, but I know that their Injera bread is gluten free. However, the other night when Brian asked what's for dessert, I decided to use the flour instead for some sort of yummy dessert bar, that I could also share on the Gluten Free Homemaker's Gluten Free Carnival, as this month's challenge was dessert bars. Fortunately, since I have no experience using teff flour, there was a recipe on the package for making peanut butter cookies. Well, since I can't ever seem to bring myself to follow a recipe, what turned out was Almond Butter Teff Cookie Bars - and they were really good!

Gluten Free Almond Butter Teff Cookie Bars
Almond Butter Teff Cookie Bar Recipe
Ingredients
1 cup teff flour
1 cup almonds
1/4 cup coconut sugar
1/4 cup brown rice syrup
1/4 cup coconut oil
1 tsp vanilla
dash of salt
2/3 cup almond milk
2 tbs unsweetened cocoa powder

Some with chocolate chips, some without



Put almonds in food processor and blend until they turn into almond butter (this will take several minutes, patience is key here). I had the solidified kind of coconut oil, so I melted mine in a small bowl placed in a bowl of boiled water, stirring until melted. Add to food processor with almond butter. Also add in brown rice syrup and vanilla and blend. In a bowl mix together dry ingredients, then add to food processor and mix. Add almond milk till you reach a thick but spreadable consistency. Spread into a lightly greased 9x9 pan and bake for 12-15 minutes.

Optional Variations:
I smooshed chocolate chips on the top of one half and it was delicious!
Try a healthy alternative to ice cream pizookie, instead top with plain yogurt and cinnamon.

These were so addictive I think I had 2 or 3 before 11am the next day and then had another 2 when I got home from work!! Ok, we are off to Boston for Brian's marathon. I've packed him two different types of toasted quinoa granola, some gluten free oat and fruit based granola bars, macaroons, and some almond butter chocolate cups for the celebration after. Hopefully all these carb-filled treats will energize him for the run!
