Figs & Peanut Butter

Our friends had planted some fig trees in our new house, but they have yet to produce ripe figs. And we've been eyeing a couple of fig trees in the neighborhood, but they haven't gotten ripe quite yet. So, when i saw organic, local Californian figs at Trader Joe's yesterday for just $4, I was all up on them!
What I think I like most about figs is their mellow flavor and smooth texture. This makes them super versatile. When we were in France we made fig everything. Figs in yogurt, prosciutto wrapped figs stuffed with brie, fig and goat cheese salads, roasted figs, and the quick snack/dessert - figs with peanut butter. This is seriously one of the simplest, but most delicious desserts around.

Pick your figs when they are soft, but not mushy. Wash and pluck the stem off. Slice in half and spread on some peanut butter. Enjoy!
Figs and Peanut Butter make a smooth, comforting dessert that is full of fiber and nutrients and not too sweet. You can enjoy them at breakfast, for a snack, or for a less sweet dessert. When I do want something a bit sweeter, I sometimes make dates with peanut butter. Just slice in half, pluck out the pit and replace with a scoop of peanut butter or almond butter. I can really only handle 1 or 2 of these things because they are so rich and sweet. But WOW! Simply gourmet tasting!
So eat up your fresh figs while you can...but once it's too late, you can still have dried figs with peanut butter - they are just a bit sweeter and a lot chewier!
