Coconut Cranberry Pecan Gluten Free Granola Recipe

I find it really hard to find good, organic, refined sugar-free, gluten free granola in the stores - especially at a reasonable price. So here is a recipe for DIY gluten free granola.

Coconut Cranberry Pecan Gluten Free Granola Recipe
Vegan Gluten Free Granola
Ingredients
2 cups of gluten free oats (Bob's Red Mill GF Oats is a good one)
3 tbs coconut oil (warmed slightly to liquify)
1/4 cup + 2 tbs coconut nectar (or honey, maple syrup, or agave)
1 cup of chopped pecans
1 cup dried cranberries
1/2 cup shredded coconut
dash of salt and cinnamon

Preheat your oven to 325 degrees. 
Mix together the gluten free oats, salt, cinnamon, coconut oil, and 1/4 cup coconut nectar. 
Spread flat across a rectangular cake pan. 
Bake for 5-10 minutes, stir and bake for 10 more minutes. 
Remove from the oven and stir in the 2 tbs of additional coconut nectar, pecans, cranberries and coconut. 
Bake for 10 more minutes or until the oats start to turn golden. But, be careful not to let them burn. 
Stir and let sit and cool. Store in an airtight container and enjoy throughout the week!

This is a great recipe to make ahead for camping, backpacking, road tripping, work, hiking, or anywhere you need a snack to go.
