Fancy Gluten Free Layered Parfaits

Pretty Parfaits made Gluten Free
I was inspired to make this aesthetically pleasing parfait by Giada from the Food Network. She is fun to watch. I love her soothing voice (not to mention she is pretty to look at too), but my favorite part is when she will break into an overly pronounced Italian accent whenever she says an ingredient that is Italian. When she made parfaits she made them with RICOTTA, but I made mine with plain yogurt. I made these decorative parfaits as a surprise treat for my mom one morning when I was visiting her.  Using fancy glasses and garnishes make everything more fun to eat!

Note: This recipe is not dairy free, but I recommend trying Goat's Milk Yogurt if you are intolerant to cow's milk. Goat's milk has a different make up that is closer to human milk and many people that can't handle cow's milk can have goat's milk fine. Redwood Hill Farm is the brand that I have found in both Colorado and California, and while it is expensive, it is SO heavenly! I'm not a fan of soy unless you can find it organic and not all GMO'd up the wazoo, but there are some soy yogurts out there. Also, you could try a dairy free / vegan parfait variation with avocado.


Fancy Gluten Free Layered Parfait Recipe
Breakfast is served!
Ingredients:
3 cups of plain yogurt
2 strawberries
1/2 banana
1/2 cup blackberries, raspberries and/or blueberries
1/2 cup GF granola or mixed chopped nuts and seeds (like sunflower seeds, pecans, walnuts, almonds, macadamia nuts)
2 tbs chia seeds
Honey (optional)

1. Pick out a fancy wide glass or go country style with mason jars.
2. Slice up your fruit
3. If you are making this for someone with a sweet tooth you can mix the plain yogurt with honey first - but if you don't like sweet very much, the fruit will be plenty sugar for this dish
4. Layer your ingredients: 2 heaping tablespoons of yogurt, a thin layer of mixed berries and bananas, 2 more spoons of yogurt, a layer of fruit topped with a tablespoon of chia seeds, 2 more spoons of yogurt, fruit and then top with about 1/4 cup of granola or seed and nut mix. You can even drizzle honey on top or garnish with mint.
5. Then repeat to make one for someone you love :)
