Rosemary Apple 'n Onion Toasties

Here's a super simple and quick snack, dinner, side dish, lunch or what-have-you. It's perfect for fall, with it's warming taste and texture.

I had planned to make these for our Halloween party, but never got around to it. So instead Brian and I enjoyed them alongside some soup and sprout salad after an unexpectedly long run in Mission Gorge last weekend. I had planned to run 3 miles, then grab my book and water and a snack for a little hike/picnic while Brian ran for two hours through the Fortuna Mountains.

Unfortunately for my legs, the spare key to Brian's truck fell off my shoe as I was coming back down from the crazy steep Climber's loop. I then retraced my steps back and forth twice before giving in and just running throughout the gorge for the remaining hour and a half until Brian returned with his key. Needless to say, I was hungry and tired upon arriving back at home. This was a great comforting and filling meal that took minimal effort - just what I needed!

Rosemary Apple 'n Onion Toasties
4 for Brian, 2 for me
Ingredients
2 apples, cored and sliced
1 small yellow onion peeled and sliced
1/4 cup of red wine
1 sprig of rosemary chopped
2-4 tbs olive oil
Sliced goat gouda or cheese of your choice (optional for dairy free)

  • Preheat oven to 400 degrees. 
  • Caramelize the onions by sauteeing them in the oil and wine on about medium heat for several minutes, scraping them off the pan every few minutes but allowing them time to brown.

  • Meanwhile, core and slice the apples thinly and add to the softened onions. 
  • Slice the gluten free english muffins in halves and place in the oven on a baking sheet for a few minutes to toast.
  • Once the apples are cooked, the red wine is cooked down completely, and the muffins are getting slightly toasted, remove the muffins from the oven. 
  • Drizzle the english muffins with olive oil for the dairy free option or place cheese slices for the not so dairy free option. 
  • Scoop the apple and onion mixture onto each english muffin half and sprinkle with rosemary. 
  • Return to the oven and toast for a few more minutes (about 3-5).

Sunset in the gorge was a great appetizer for this meal.
