A Cheater's Chocolate Bark
Ok so this is totally cheating from the "Healing Diet" I was supposed to be on the past week. But, I told you before, SEVERE chocolate addiction. So I found a way to cheat and have my unhealthy fix each day without being as unhealthy as I was before. And since I didn't use any refined sugar, Brian could indulge too!
Here are my desperate attempts at homemade cocoa fixes. Why no pictures? Cause I ate 'em all too fast.
Refined sugar-free, gluten free, dairy free chocolate bark (still not totally guilt free though)
Unsweetened Cocoa Poweder
100% Maple Syrup (this recipe is by no means low-glycemic by the way)
Chopped Macademia Nuts
Raw shaved almonds
Mix everything but the almonds according to taste. I like bitter so I went heavy on the cocoa and light on the maple syrup (actually the whole batch didn't even have 1 whole serving of syrup). Spread out your goopy mix on parchment paper, top with almonds and freeze.
P.S. There is no hiding this chocolate indulgence - the chocolate does get on your fingers :)
Chocolate Covered Banana Bark
Unsweetened Cocoa Powder
Almond Butter (yes I have for now relinquished the beloved peanut butter as I was disciplined in class on its unhealthiness)
Raw Honey
Boiled water
Banana slices
Heat a little water in your teapot. Mix cocoa powder, almond butter, and honey - yes it is a sticky mess!
Add as much hot water as is needed to make the mixing process more manageable. When you have a smooth, but thick chocolatey goo going, spread a little bit of the goo in a rectangle on parchment paper. Top with banana slices. Spread the rest of the chocolate on top and work it around and over the bananas. You could use a plastic spatula for this, but I enjoyed using my fingers because I got to lick them after! Whewy - sugar rush! Fold the parchment paper across the top to smooth it into a good rectangle and freeze till solid. Again, not for one trying to actually lower their sugar intake, but on the bright side it is gluten free, peanut free, refined sugar free, and dairy free :)
Now that class is done and I get home before 9:30pm, I will start sharing some actually healthy recipes with you. Till then, go ahead and indulge!
