Veggie Wraps with Veggie Chips and Nut Dip
I thought I would repost these refreshing gluten free veggie wraps for summer. They are the perfect no cooking meal for a hot day when you need to replenish your nutrients and water.
Ok so Veggie Wraps are not stuff I fed Brian. But this dry Boulder air is killing my sinuses and my energy around dinner time has been very low. I still fed Brian very well - Roasted Sweet Potato, Fennel, Carrots, and Onions with Cinnamon Flavored Millet on Wednesday night and very colorful Sauteed Mexican Flavored Veggies over Red Cabbage with Homemade Salsa and Guacamole last night. But I was too tired to pay attention to how I made it or write up a post, so I will instead share my lunch with you.
Veggie Wraps
Ingredients
2 white mushrooms
1/4 cucumber
1 slice of onion
2 green onions
Pesto
Sprouted corn tortillas, Chard leaf or Romaine lettuce
That's right, spread the pesto on the wrapping device of your choice, chop the veggies and plop 'em on - rocket science!!
Pesto
Ingredients
2 cups basil
2 cloves garlic
2-3 tbs olive oil
S&P if you want
Blend all ingredients in a food processor (you can also add pine nuts too!)
Veggie Chips
Just cut up fresh veggies of your choice! I had on hand zucchini, radishes and green pepper
Nut Dip
I found this recipe in the Raw Food Detox Diet book, but I found I had to change up the amounts drastically to get the right texture, so here is what I am thinking i finally ended up with, but you may find you need to add a little more of this or a little more of that.
1/2 cup chopped macademia nuts
1 1/2 cups walnuts
3 tbs pine nuts
Juice of 1 lemon
2 cloves of garlic
7 hits of Braggs Liquid Aminos
1/3 cup parsley
Blend it all together and use as a dip or spread.
This was a deliciously colorful, which I like a lot :)
I'm starting my Healing Diets Workshop this weekend! I can't wait to share some of the delicious recipes I learn and what they are good for treating. Maybe they will teach me how to cure this sinus infection!!!
