Coconut Ginger Granola Trail Mix Recipe for Camping

We're attempting to go camping this weekend at Vedauwoo in Wyoming. Although, there is a chance of thunderstorms and rain, so we may end up at the local bar and sleeping in our friend Austin's 4runner. I made a quick trail mix to take with us on our weekend trip. This would be a great recipe for backpacking, as it is fairly light and shouldn't be affected by temperature very much. It's a good car camping recipe too though - although I am slightly worried that Brian will eat it all in the car on the way up. Here is the recipe for Ginger Coconut Granola Trail Mix - Gluten Free, Dairy Free, and Vegan (I even used maple syrup instead of honey!).

Ingredients
1 cup certified gluten free oats (I used Bob's Red Mill)
1/4 cup 100% pure organic maple syrup
1/8 Cup oil (I recommend coconut oil but I had olive oil on hand this time and it worked fine)
1 tsp ground ginger (or the fresh stuff if you got it!)
1/4 cup shredded coconut
1/2 cup pumpkin seeds (sunflower seeds would work too)
1 cup almonds (I soaked and dried mine first)
1/2 cup raisins
1/2 tsp salt

Preheat oven to 325 degrees.
Mix together the gf oats, salt and ginger in a large bowl.
Stir in the maple syrup and oil.
When the oat mixture is well mixed, stir in coconut, seeds, and almonds.
Spread out on a baking pan and bake for 10 minutes.
Stir and bake for 15-20 more minutes until the oats are to your desired texture.
Stir in the raisins - you could also try chocolate chips or m&ms :)
Let cool, then pack this tasty yet simple trail mix for your next hike, backpacking trip, camping trip, road trip, vacation, work, or eat it all before you leave the house ;)
