Creamy Frozen Key Lime Pie

This cool and creamy no bake key lime pie is the perfect summer treat!
Yesterday was officially the hottest day so far here in North Texas. The mercury reached a whopping 105 degrees and we are only in the middle of July! These are the days that I find myself dreaming of Fall and Winter. Texas summers are brutal to say the least. 

Today I have a yummy recipe for Creamy Frozen Key Lime Pie that's guaranteed to cool you off just a bit. This easy pie is one of my favorite summer desserts!  When the temperature gets this hot no bake desserts are always the way to go. This recipe comes from my late mother in law who shared it with me years ago.

It's best to use fresh key limes for this recipe, but sometimes they can be hard to find depending on the are you live in. If you can't find them you can use bottled key lime juice or regular limes, but key limes have  more of an intense flavor and aroma. Key limes may be small, but they pack a huge flavor punch than regular limes making them perfect for this pie. 

Lets get started! In a medium size bowl, beat the cream cheese until smooth. Gradually add the condensed and evaporated milk and blend. Add key lime juice and beat for one minute. Pour mixture into prepared graham cracker crust.

Freeze the pie for at least 2 hours. Then let stand at room temperature 10 - 15 minutes before serving. 

Garnish with fresh whipped cream, lime zest and key lime slices.

Creamy Frozen Key Lime Pie

Ingredients:
1 - 8 ounce package cream cheese, softened
1 - 14 oz can sweetened condensed milk
1 - cup evaporated milk
1/2 - cup freshly squeezed key lime juice or bottled key lime juice (found in the cocktail drink isle)
zest of 2 limes 
1 - prepared graham cracker, shortbread or vanilla wafer crust 
Fresh cream and lime slices, for garnish

Directions:
In a medium size mixing bowl beat the cream cheese until smooth. Gradually add the condensed and evaporated milk and beat again. 

Add the key lime juice and mix on medium speed for one minute. Pour mixture into prepared pie crust and freeze for at least 2 hours. 

Let pie stand at room temperature 10 - 15 minutes before serving.

Garnish with whipped cream, key lime slices and lime zest. Store leftover pie in freezer. Thaw as needed.
