Gluten Free, Vegan Irish Soup - St. Patty's Day sans corned beef

Well, Brian seems to never be full, no matter how much stuff I feed him. But once again, on St. Patrick's Day I did my best to fill him up. Here is a semi-quick and easy recipe for:

Vegetarian Irish Soup - aka - Potato, Carrot, and Cabbage Soup.
Vegetarian, Gluten Free Irish Soup Recipe
Ingredients
1 large onion chopped in large chunks
4 cloves garlic - chopped
1 large russet potato sliced in 1/4" thin slices and cut in pieces
6 carrots sliced thickly
4 stalks of celery sliced
4 mushrooms sliced
1/2 green cabbage cut in large chunks
Spices- S&P, parsley, rosemary, thyme

Fill a large pot with 1/4" of water and heat on medium high. Add onion and garlic and cook a couple minutes, adding remaining ingredients in order except for cabbage, cooking for a minute or two between ingredients. Sprinkle a few shakes of each spice (or other spices you prefer). Heat water in a teapot and pour into pot so the water line is just a tad over all the vegetables. Bring to a boil, stir, reduce to a rolling simmer, cover and cook on medium or med-low for about 30 minutes. Add cabbage on top without stirring in and re-cover and cook for another 20 minutes. Stir in cabbage and cook uncovered for another 5-10 minutes or until carrots and potatoes are soft.

Note - If you are someone who stocks their kitchen better than I, you may have vegetable stock on hand. In that case, substitute the water and spices for the veggie stock.

I served this with a side of green peas, because they are green and I was trying to come up with more food to feed Brian. I must say, I did find myself asking "where's the corned beef", but if you are used to St. Patty's Days without it, then this should be a perfect Irish meal. Maybe serve along with some Irish Soda Bread - this is a recipe from a gluten free Boulder-local blogger. I haven't tried it yet, but when I am back to eating bread  I plan to give it a go.


Cinnamon Banana Ice "Cream"

Oh yes, and for dessert we tried Maria's frozen banana ice cream recipe and topped it with green kiwi slices to go with the holiday. (I was tempted to blend the kiwi in to make it green for St. Patty's, but I was worried it would ruin the whole thing, and I didn't have a dessert back up plan, being the end of the week. I think I will freeze extra bananas next time so I can experiment)

Kermit the Frog may say it's not easy being green, but this "Green Shake" recipe boldly begs to differ. I started out the morning with this zazzy drink to energize my day and bring out my 1/4 Irish ancestry. My last name actually originated from Ireland, and I'm thinking maybe my pale skin and freckles too...
