Sweet Potato Fries - Brian's favorite stuff

Note: Brian loves Yams much more than yellow sweet potatoes. I think it's because orange is the best color around.

Ingredients:
1 large yam
2 tbs olive oil
Spices as you like


Preheat oven to 400 degrees.
Scrub and wash sweet potato - the peel is the best part so leave that on, but keep it clean.
Cut the potato into little strips. I like to cut the ends off the potato and then cut it in thirds (or half if it is a small one). Then cut those pieces in thirds and then chop those up to thick fries.
Toss the orange buggers in a large baking pan or casserole dish.
Season however you like (cayenne, cumin, garlic, & salt for spicy or cinnamon, brown sugar, & honey for sweet).
Lightly coat with olive oil and toss around - use your hands to get it evenly coated.
Then just bake for 30 minutes.

BONUS! Yams are Brian tested, nutritionist approved. Yams are a good source of dietary fiber, potassium, vitamin C, manganese and vitamin B6. Plus they have a low glycemic index because their complex carbs are processed slowly. So enjoy this deliciously orange treat!
