Rushed dinner and an enlightening dessert
Ok, so I didn't feed Brian very well last night. It was good, but not my preference. After a fun-filled Saturday we found ourselves an hour behind schedule to get to our evening plans. So I resorted to food from a package!!! Ah! This is a rare occasion, but I can say, that it isn't a bad idea to have a reserve of some quick, packaged meals for emergencies like this. Last night I resorted to Gluten Free Lundberg's Creamy Parmesan Rissoto. At least their products are all natural, eco-farmed, and you can actually identify every item on the ingredient list. I recommend keeping a box or two around for those emergency nights when you need a quick, filling dinner and don't have any other ingredients on hand.
Oh, and as you can see, Brian also got to enjoy his FAVORITE food: Sweet Potato Fries! Even in a rush, you can enjoy the rich flavor of sweet potatoes. Here is the simplest recipe ever.
On to dessert:
After dinner, we walked a couple blocks over to the School of Natural Medicine. I'm going to be taking their Healing Diets certification course at the end of the month, and Farida, the director, kindly invited us over for a little get together they were having.
It was a cold, windy, dark walk over, but we were greeted warmly with cups of tea as we were escorted to have a seat on the plush red rose carpets of this historical, Victorian home. There were about 15 people cozied up in the living room, listening to Farida's elegant, musical voice reading from a book about the 11th century saint Hildegard - a nun, writer, visionary, artist, musical composer, and natural healer. We then enjoyed the showing of a DVD about her life - which I thought was far too underdetailed to do justice to the glimpses of powerful works this revolutionary woman had fought to complete.
Afterwards, we looked at pieces of her art, discussed her messages, mission, and strengths, and enjoyed listening to some of her music. We met some amazing people that have or are attending the school, and we got to take a step out of our usual routine and reflect on some meaningful themes in our lives. It was one of those uplifting experiences when you feel inspired to do what you've always wanted to do. A time and place where no one judges you, but only lifts you up to achieve your purpose - whatever it might be. I wish I could more frequently tune out the unnecessary noise of our world, and give in to God's will for me and for us.
We left the event feeling moved, empowered, and humbled. As we journeyed back home into the howling wind, walking alongside Wonderland Lake and the snow covered mountains, I looked up and was chilled by the rainbow-colored circle the clouds formed around the moon - which shifted into flames of fiery orange and back to soft purples and then a gentle yellow glow - it deeply resembled many of Hildegard's visionary art pieces. I thought, we are so little in such a big beautiful world, yet together we make such big impacts - often negative, but often good as well. Brian and I reflected on our place in the world - What are we doing in Boulder? What should we do with our lives? Why don't we just do what we want to do?
...It was one of the most delicious desserts I have had in a while.
