Recap of stuff I fed Brian recently
Oh the life of Brian....in the past week Brian enjoyed:

Wednesday Night: Baked Lemon Oregano Trout with Roasted Red Onions (brian likey onions) and Roasted Jerusalem Artichoke and Red Potato...mmmm get ya some inulin!
Tuesday Night: Spaghetti Squash tossed with Asparagus,Greens & Lemon Juice
Monday Night: Quinoa Enchilada Casserole (this was actually really good - but it was a result of what is left in the house)
Sunday Night: Asian stir fry with quinoa...I was slightly disappointed because I didn't see it appropriate to put cheese in Asian food...but golly I wanted some cheese that day (shh, don't tell - I added parmesan cheese when I heated up leftovers for lunch the next day)
Saturday Night: Our one friend we made in Boulder so far invited us out to eat at a place that had GF Pizza! Thanks Leah!
Friday Night: My favorite of recent times- Eggplant "Parmesan" Casserole with Baked Asparagus
Thursday Night: Vegetarian Tacos with Homemade Holy Guacamole!
What did all of these dinners actually entail? I will link to the recipes another time, for I have an interview early in the morning. But, here is a quick recap of tonight's last minute ghetto meal that Brian said he liked a lot.
Ghetto Gringo Mexican Fried "Rice" Turned Quinoa
Our new roommates kindly invited us out to a local brewery tonight to meet some of their friends. However, I lost track of time and realized I had to make dinner in 20 minutes or risk starving while watching people eat glutenous bar food washed down by glutenous beer all night.
So I threw some pre-rinsed quinoa in a pot. Once it boiled and I turned it to a low, I diced half an onion and threw half of that in the pot with the cooking quinoa. The rest of the onion went in a hungry lil bowl that was waiting for 2 avocados to be mashed up in it and joined by some lemon juice (I prefer lime but hey haven't shopped and we got 15 min left), garlic, and cayenne pepper. Instant guac, instant party!
Then I scavenged for protein. Black beans or eggs, and since I have to share a room with Brian, I erred on the side of not the magical fruit. So I scrambled 3 eggs and put them aside.
Once the quinoa was almost cooked through, I turned up the heat to medium and tossed in a couple handfuls of baby spinach and 1/5 jar of salsa I found in the fridge. I obviously topped it with crushed red pepper, as well as some cumin, salt, and pepper. Threw in the scrambled "never to be chicks", and served it with the holy guac and chips.
Voila! Ghetto Gringo Mexican Fried Quinoa.
So if i had to write down a "laying around the house list"..which I really don't like doing...it would include:
1 cup quinoa
3 eggs - and you better let those mother chickies roam
1/2 onion
3 cups of baby spinach
1/5 jar of mystery fridge salsa
2 avocados
Squirt o' lemon juice
Seasonings are up to you, but I used (crushed red pepper, garlic, cumin, pepper, cayenne, salt)
