Ice Cream Sandwich Cake

Dressed up store bough ice cream sandwiches, combined with ice cream toppings and candy make up this simple Ice Cream Sandwich Cake. 
I can't remember the first time I tasted this Ice Cream Sandwich Cake, but what  do remember is how much I loved it!!! I do remember getting this recipe from a friend and I was surprised to find out that this delicious cake is easily made using store bought ice cream sandwiches and comes together in about 30 minutes.  

If you like ice cream cakes than you have noticed how crazy high they are in the grocery store. Why pay so much when you can easily make one at home. My son loves ice cream sandwiches, so I think I will be making this cake for his birthday next summer. 

The best thing about this cake is that the flavor possibilities are endless. Interchange ice cream sandwiches, toppings and different candies to create your favorite flavor. A few of my favorite toppings are chocolate, butterscotch, caramel or marshmallow topping. Just select a candy toppings according to your ice cream topping flavor it's as easy as that.

Strawberry or Neapolitan is a delicious ice cream sandwich choice. If you love chocolate I would go with crushed whoppers, crushed oreo's, chocolate chips, m&m's for the candy topping. 

If using butterscotch or caramel topping go with crushed butterfingers, snickers or heath bar bits. Another great flavor combination is Smuckers marshmallow topping with plain or chocolate cool whip and chocolate chips. I think the flavor possibilities are endless. 

I've included a few step-by-step photos to show you just how easy this ice cream cake came together. As you can see by the photos above I forgot to add the foil (for easy removal) in the dish before I got started, but I quickly corrected it and continued on.

Ice Cream Sandwich Cake


Ingredients: 

11 -  vanilla, chocolate, neapolitan or strawberry ice cream sandwiches
1 - 16 oz container whipped topping or fresh whipped cream
1 - 16 oz jar Hershey's hot fudge ice cream topping
1 - cup chocolate chips, whoppers candies, Oreo cookies, m&m's, chocolate chips, festive sprinkles, heath bar bits, peanut butter cups or crushed butterfingers
Hershey's chocolate syrup for garnish
chocolate or colored sprinkles for garnish
foil to line pan

Directions: 
Line a 8 x 8 x 2 inch baking pan with foil, making sure the foil lays over the sides of the pan. This will make it easier to remove the ice cream cake from the pan when frozen.

Layer 5 1/2 ice cream sandwiches on the bottom of the pan. Spread a layer of hot fudge topping on top of the ice cream sandwiches. Then spread half of the fresh cream or whipped topping  over the fudge topping.

Repeat the same process with the second layer ending with hot fudge. Cover with plastic wrap and freeze for about one hour. Remove from freezer and remove the ice cream cake from the pan.

Lift the cake peeling off of the foil and place it onto a serving plate. Frost with additional fresh cream or whipped topping.

Drizzle on some Hershey's chocolate syrup and garnish with chocolate chips and sprinkles or the candy toppings of choice.

Place the ice cream cake back into the freezer and freeze for 2 hours.

Cook's Note: Fresh stabilized whipping cream can be substituted for whipped topping with the same results. See recipe below.



Stabilized Fresh Whipping Cream 

1 - 16 oz container heavy whipping cream
1 - teaspoon vanilla extract
1/2 - cup powdered sugar
1/4 - teaspoon vanilla extract 

Prepare the whipped cream topping, by whipping the cream slowly until the cream is slightly thickened and soft peaks start to form. 

Add the vanilla extract and powdered sugar, continue whipping until the cream forms semi stiff peaks. Proceed with recipe using fresh whipping cream. Freeze any leftover whipped cream for another use.
