Udi-licious Power Bars - Naturally Sweetened, Dairy Free, Gluten Free
I usually hate self promotion, but I would also love the chance to go to a Gluten Free Cooking Class at Le Cordon Bleu Cooking School. Since feeling sick for two weeks now after a suspected gluten exposure at culinary school, I would really appreciate the opportunity to take a cooking class without the effects of flour being in the food, kitchen equipment, and air even. The contest is a challenge to come up with a recipe using one of Udi's gluten free products. Since I could only find Udi's sandwich bread or Udi's granola in the stores around here, I went with the granola because I thought it would be a bit different. It also went well with my goal of trying to come up with some on-the-go snack foods to bring to school and work with me, which will hopefully prevent me from buying boxes of Pamela's Gluten Free Chocolate Chip Cookies.
I have to admit that when I sampled these right after I made them I thought, oh just another power bar. But when I got to school and busted one out for lunch the next day, I was in heaven! The flavors really came together to form a deliciously rich infusion of creamy, crunchy, sweet, and salty.

I will also include the recipe below here along with the honey, coconut, raisin ones I made with Brian in mind, because he loves coconut and raisins.
CPBCPBs....code for Chocolate 'n Peanut Butter Chewy Power Bars - Gluten Free, Dairy Free, Vegan, Cane Sugar Free
Ingredients
1/3 cup Natural Peanut Butter
4 TBS Honey
1/2 cup Cacao Nibs, coarsely ground
1 1/2 cups Udi’s Gluten Free Granola, Au Naturel
Pinch of Pink Himalayan Salt
Directions
1. Melt peanut butter and honey in a saucepan over low heat.
2. Mix in the cacao.
3. Incorporate 1 cup of the granola
4. Remove from heat and roll out the mixture into a long cylinder on top of the remaining dry granola, coating it well.
5. Wrap in plastic wrap and let set in the freezer for an hour or the fridge for a couple hours.
6. Slice the roll into rounds (or roll out the cool mixture about 1/2" high and cut in fun shapes with a cookie cutter)
7. Refrigerate until ready to serve.
Honey Coconut Raisin Power Bars - Gluten Free, Dairy Free, Vegan, Cane Sugar Free
1/2 cup coconut shredded, dried
1/2 cup raisins
3 TBS honey
4 TBS coconut oil
1 cup granola
Pinch of Pink Himalayan Salt
Directions
1. Melt coconut oil and honey in a saucepan over low heat.
2. Mix in the raisins and coconut.
3. Incorporate the granola
4. Remove from heat and roll out the mixture into a long cylinder.
5. Wrap in plastic wrap and let set in the freezer for an hour or the fridge for a couple hours.
6. Slice the roll into rounds (or roll out the cool mixture about 1/2" high and cut in fun shapes with a cookie cutter)
