Chicken, Bacon, Ranch Pizza
Hi everyone today I have another yummy pizza recipe to share. I've been trying to experiment with different pizza flavors lately, so we don't get bored with the same old thing.
My kids prefer the traditional cheese or pepperoni pizza, but I like to change things up a bit for hubby and I. By far his favorite pizza recipe is my BBQ, Chicken & Bacon Pizza, but he's willing to try new flavors from time to time.

On the menu that particular night was Chicken, Bacon, Ranch Pizza. Anything with bacon is always for me so I was in from the get go. When it comes to pizza there really isn't any rules, so sauces and toppings can be limitless.
The ranch dressing on this pizza was a yummy change from your typical pizza sauce. My daughter loves to dip pizza in ranch dressing, but this pizza wasn't for her. New pizza recipes usually aren't, but that doesn't stop me from trying new pizza combinations.
This pizza night was a bit different, because I was using the pizza feature on my new Frigidaire Symmetry Double Oven for the first time. I was a bit nervous because I didn't know how well it would go over. There's nothing worse than putting together a great pizza just to under cook or burn it.
The Frigidaire Double Oven pizza feature was pretty easy and straight forward. Just choose the upper oven button and press the pizza feature. You will be given a choice of "Fresh" or "Frozen" pizza then just hit start. I was surprised that it gave me a choice for fresh or frozen pizza, so that's pretty handy.
For fresh pizza the oven preheats to 400 degrees in 11 minutes. For frozen pizza it's 425 degrees and takes 12 minutes. The upper oven also cooks the pizza on true convection for even cooking.
No setting required the oven automatically converts to convection on the pizza setting. From start to finish the pizza took around 15 minutes to cook. I think I'm really going to like this pizza feature on my new stove : )

I have included some photos of the pizza preparation and assembly. Mix your pizza dough and press into a large pizza pan (14 inches). Pre bake the pizza crust for 8 - 10 minutes, remove and set aside.
Bake in a preheated 400 degree oven for 15 - 18 minutes, or until bottom crust is lightly browned and cheese is melted.
Chicken, Bacon, Ranch Pizza
Crust:
2 1/2 - cups all purpose flour
1 - teaspoon salt
1 - cup warm water
1 - tablespoon baking powder
4 - tablespoons butter, softened
1 - 1/4 oz packet yeast (I used rapid rise)
2 - cups cooked or grilled chicken, cut into bite-sized pieces
(I use rotisserie or John Soules)
Toppings:
2/3 - cup ranch salad dressing
8 - slices bacon, cooked & crumbled
1/4 - large red onion, sliced, optional
1/2 - tablespoon reserved bacon grease
2 - cups shredded Mozzarella Cheese
1 - cup shredded Colby Jack or Cheddar Cheese
pepper to taste
Directions:
Preheat oven to 400 degrees. Prepare pizza crust. Spray pizza pan with non stick baking spray or brush with olive oil. Press the pizza dough into the pan and pre bake crust for 8 - 10 minutes. Remove crust from oven and set aside.
While the pizza crust is baking fry the bacon. When bacon is cooked set aside to cool then crumble. Drain a bit of the bacon grease off of the pan and reserve about 1/2 tablespoon.
Add the chicken and pepper to taste and saute on medium heat for about 5 minutes. The chicken is fully cooked so we are just giving it a bit of flavor. If using onion add it in with the chicken to saute. Set chicken aside when finished.
Pizza Assembly: Spread 2/3 cup of ranch dressing evenly on the pre baked pizza crust. Add half of the cooked chicken and bacon. Add both cheeses and then top the pizza with remaining cooked chicken and bacon.
Bake in a preheated 400 degree oven for 15 - 18 minutes, or until bottom crust is lightly browned and cheese is melted. Remove from oven and let sit for 2 to 3 minutes before slicing.
