Purple Potato and Dill Salad Recipe - Dairy Free and Gluten Free

I’m a sucker for colorful food. It makes me wonder if God made certain foods colorful and tasty so that we’d eat them and get healthy and strong. I hope that is true, because that would make life that much better!
Here is a recipe packed with vibrant colors and nutrients. To me, it looks like Easter with the purple from the potato, the pink of the beets, the green of the celery and chives, and the pretty dill flowers. Might have to keep this one in mind for next spring…
Purple Potato and Dill Salad Recipe made Dairy Free and Gluten Free
Purple potato beet and dill salad |
Ingredients (makes about 6-8 servings)
12 purple potatoes boiled and chopped
2 small beets or one very large beet
2 cups of homemade GF DF mayonnaise
2 celery stalks finely diced (about 1 cup)
½ lemon juiced (about 2 tbs)
3 tbs chopped chives
4-5 bunches of dill flowers (about 3 tbs chopped, and extra for garnish)
Salt and pepper to taste
1. Scrub your purple potatoes clean and boil in a large pot until tender (they are done when you can easily poke them with a fork)
2. Drain and cool the potatoes.
3. Whip up the mayonnaise and set aside in the fridge– click here for a dairy free, gluten free homemade mayonnaise recipe
4. Clean and grate or finely chop the beets and add to a large mixing bowl.
5. Chop and add the celery, dill, and 2 tbs of chives to the bowl.
6. Once the potatoes are cooled, chop them into 3/4” chunks and add to the bowl.
7. Mix together all the ingredients and then mix in the homemade mayonnaise.
8. Season with lemon juice, salt, and pepper to taste.
9. Garnish with a drizzle of extra mayonnaise, 1 tbs of chives, and extra dill flowers.
10. You can eat at room temperature, but I recommend putting it in the fridge for at least an hour.
While the beets and purple potatoes steal the show on the table, the dill flowers take the cake in the flavor department. This is a great make-ahead meal for a summer bbq and makes a great filling side dish.
