Strawberry Dessert Pizza

This Strawberry Fruit Pizza is made with sugar cookie dough topped with a cream cheese layer, fresh strawberries and a strawberry glaze!
July 4th is tomorrow. Do you need a quick, easy and festive dessert for you holiday get-to-gether? I was challenged by Walmart to come up with an easy dessert for your July 4th celebration. I knew immediately which dessert that I wanted to make, my favorite Strawberry Dessert Pizza.

Strawberry Dessert Pizza is just a spin on a traditional fruit pizza. What I love most about fruit pizza's is just how versatile they are. You can make the cookie crust and cream cheese filling and then use any combination of fruits that you like. When I think of Independence Day red, white and blue come to mind.

This recipe can be made with all strawberries, but feel free to add a few blueberries to complete the patriotic color scheme. I chose to leave off the blueberries because my kids love plain strawberries.

This recipe only requires a handful of ingredients making it easy to make. If you need a last minute July 4th themed dessert I hope you will try this one because I know you will love it.

If you cannot find store bought Strawberry Glaze (found in the produce section). I have included a recipe for a homemade version. Click here for the recipe. It is the same glaze I use to make my favorite Strawberry Pie.

Enjoy and I hope everyone has a happy and safe Independence Day!

Strawberry Dessert Pizza

Ingredients:
1 - 16 oz package refrigerated cookie dough or use homemade
2 - 8 oz package cream cheese, softened
2/3 - cup regular sugar
1 - 16 oz container fresh strawberries, halved
1 - 13 oz container store bought strawberry glaze or homemade (recipe below)

Directions:
Preheat oven to 350 degrees. Cut cookie dough into 1/4 inch slices and arrange on a lightly greased 14 - 15 inch pizza pan. You can also layer foil over the pizza pan for easy cookie removal.

Press the cookie dough pieces together to form a pizza crust. Bake in a 350 degree oven for 15-18 minutes or until the cookie dough is cooked and golden brown. Let cookie crust cool completely.

Beat cream cheese and sugar together until smooth and creamy. Spread cream cheese mixture over cooled crust to within 1/2 inch from the cookie edge.

Spread the strawberry glaze over the cream cheese mixture and top with strawberry halves. Serve immediately. Or, cover and refrigerate until ready to serve. Store leftovers in refrigerator.

Homemade Strawberry Glaze

1 - cup granulated sugar
1/4 - cup cornstarch
1/4 - cup strawberry gelatin (Jell-o) powder
1 1/2 - cups water
1 - teaspoon lemon juice

Combine the sugar, cornstarch, gelatin powder, lemon juice, and water in a medium size pot.

Bring mixture to a boil, then reduce heat to medium and cook until the mixture thickens, whisking often.

Remove from heat and let the mixture cool to room temperature before using.
