Happy Cinco de Mayo

In honor of Cinco de Mayo I fed Brian tacos tonight. They were nothing special, just a can of black beans rinsed and heated with some sauteed onions and garlic, placed in store bought crunchy taco shells (they were at least organic blue corn), and topped with salsa. Absolutely nothing to blog about. But, since I've been m.i.a. in San Diego for the past week, and because my Mexican food loving side of me would be ashamed if I didn't at least share some Cinco de Mayo greetings, I am instead providing you a sampling of pics of mexican inspired meals. If you like mexican food as much as I do, prepare to drool.

I'm glad to say that in San Diego I definitely got my Mexican food fix. I had fish tacos twice, rachel's individually topped nachos (every bite is a good one), chips and salsa, and rachel's mustard green "taco shells" filled with spicy frittata and guacamole. I hope you enjoyed some delicious mexican food today, and if not, go get some!
