Strawberry Spinach Salad W/Raspberry Vinaigrette

A delicious spring salad made with fresh spinach, strawberries, dried cranberries, toasted almonds and blended with a Raspberry Vinaigrette.
The other day on face book I was complaining about the high price of strawberries ($3.88 for a 16 oz pkg). I know when spring rolls around that the price of these red beauties are high, but I guess I always seem to forget.

Well I'm happy to say that when I went grocery shopping yesterday the strawberry prices have finally dropped. I picked up two 16 oz packages for $1.88 each, so that's more like it. I usually get my strawberries at Sam's Club, but we now live near Costco so I will have to check into their prices.

When I start seeing strawberries popping up the first recipes I think of are, Strawberry PieMy Mom's Strawberry Cake, and the Neely's Strawberry Shortcut Cake. But another tasty strawberry recipe that I want to share with you today is for a yummy Strawberry Spinach Salad.

Strawberries, cranberries, toasted almonds, and a tangy raspberry vinaigrette make this refreshing spinach salad so yummy. It has the perfect mix of sweet and tart. Eat this salad alone or pair along with some grilled chicken or steak. I found this recipe back when my oldest son was in Boy Scouts.

We attended a Boy Scout Potluck and this pretty salad was gracing one of the dinner tables. At first glance I wasn't sure if I would like it or not, but after my first bite I was hooked. It was at that moment that I walked all over the room asking who made this yummy salad? It took me a awhile, but I finally found the person and they were nice enough to share this recipe with me.

I think what I love most about this salad is the pretty red and green colors. If you're not a big fan of cranberries. I think dried cherries would be a nice substitute.

This salad is a snap to toss together because it utilizes bottled Raspberry Vinaigrette. My husband isn't a big fan of this salad, but that's OK it just leaves more for me. I think next time I might try sprinkling some goat or feta cheese on top.

Enjoy
