Stuff I Wish I Could Feed Brian & Deanna (guest post)
Bangin' Black Bean Brownies (GF)
Yesterday I was walking through People's Market in Ocean Beach browsing for ideas and I came across these delicious looking brownies with some crazy ingredients. I really wanted to buy one to see what it tasted like, but I couldn't handle the thought of using an enormous plastic container with one tiny brownie in it. I decided instead to totally modify the recipe and try to make them myself. If Brian and Deanna still lived in San Diego, I would have fed them to Brian and/or Deanna. I really wish they were here so I could feed them again, I really miss them.
Ingredients:
1 can organic black beans (pureed)
1 cup coconut flour
1 cup organic dark chocolate
1/4 cup cocoa powder
2 eggs
1/4 cup olive oil (or any healthy oil or butter)
1 smushed banana
1/4 cup honey or organic sugar (or more if you like it sweeter)
pinch salt
1/2 cup soy milk (or regular milk)
1/4 cup ground flax (optional)
few sprinkles of cayenne pepper (optional)
1/2 cup cashew pieces (optional)
1/2 cup shredded coconut (optional)
These brownies are not for the weak hearted brownie consumer. These turned out to be super rich and brownie-licious. The most complicated part of this is recipe is melting the chocolate which isn't hard and finding all of the ingredients that you want to use. I actually wanted to try it with carob power but Peoples was out. I mostly eyeballed everything so I am not 100% sure if I got all of the measurements correct but I think it is pretty close.
Preheat oven to 350. Melt the chocolate chips in a double boiler with honey (and butter if you use butter). While those are getting heated up puree the beans in blender. Mix beans with melted chocolate then add the rest of the ingredients above in that order. Taste to make sure it is sweet enough for your preferences, you can always add more sugar but you can't take it out.
Add any or all of the optional ingredients (or try out your own!) to make it healthier, spicier, more interesting, etc. Bake for 20-30 mins and check with a toothpick. Take them out earlier if you like mushy-lava-cakey tasting brownies. Enjoy!
When I fed them to Andrew he said "I thought you were going to make stupid black bean brownies." He couldn't even tell the difference.
