The weather in Boulder took a turn in a nice direction this past weekend and we've been enjoying sunny and low 60's since! So my craving for hot, spicy, and mushy has subsided slightly. On Sunday night I was even craving a salad (my usual warm weather craving), which I hadn't been drawn to in weeks.
So it's been 3 days of spinach salads with dinner and its been deliciously refreshing.

So what did we do to work up a craving for such hydrating foods? On Sunday we went hiking, right out our front door, onto mountainside* trails.

next sunny weekend, when the snow is gone, we're going there. Brian can go anytime bc he bought spikes to put on his shoes for the snow |

These activities prompted me to buy a pound of organic baby spinach, therefore salads all week!
My favorite salad mixes:
Lemon juice for dressing - so good and no fatties
oregano - best salad topper
pepper - Lana told me to salt and pepper lettuce before you toss the salad...I've been trying it and its been working well...except I still avoid the salt most of the time cause I just don't like it
bell peppers - mmmm so sweet and refreshing - usually half goes in my mouth before making it to the bowl
stock up when they are on sale bc they get expensive!
Cucumbers - nothing is more refreshing!
tomatoes - whats a salad without tomaters!!
onion - brian loves onions, as do I
avocado is a great creamy treat and stocked full of good fats to lower cholesterol
and of course - cheese - preferably goat or feta, but parmesan is good too
So if you are having a warm burst of sunshine in the middle of your winter (or if you are lucky and still live in sunny San Diego) enjoy a deliciously refreshing salad and you'll feel amazing after, guaranteed!
